Recipe: My Zitoun Tajine

Ingredients for 4 people:

500g chicken (or b’tefla dyalk)

150g green olives

1 medium grated onion

2 chopped ripe tomatoes

2 tbsp olive oil

1 tsp ginger

1 tsp turmeric

1/2 tsp black pepper

Salt to taste

1 bunch of chopped cilantro

1 preserved lemon (optional but delicious!)

Preparation:

In a tajine (or saucepan), heat the oil and sauté the grated onion until golden.

Add the chicken and brown it lightly.

Add the tomatoes, spices, and salt. Cover and simmer for 20 minutes.

Add the olives and the preserved lemon, cut into small pieces.

Cook over low heat for 15 minutes, then sprinkle with coriander before serving.
